CILANTRO LIME COLESLAW

Ingredients

  • 8 cups green cabbage, thinly sliced and chopped
  • 4 cups purple cabbage, thinly sliced and chopped
  • 4 scallions
  • 2 tablespoons lime zest, more if desired
  • 2-3 tablespoons of lime juice
  • 1 cup fresh cilantro, roughly chopped
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sugar
  • Kosher salt and freshly ground pepper, to taste

Directions

  1. Cut the green and purple cabbage using a sharp knife or I used my mandolin to make thin ribbons, then roughly chop.Chop the scallions. Toss the green cabbage, purple cabbage, scallions and cilantro in a large salad bowl.
  2. Make the dressing by combining the sour cream, mayonnaise, sugar and lime zest. Season with salt and pepper and finish lime juice, stir dressing to combine and then pour over the cabbage mixture. Toss to combine. Serve immediately or cover and refrigerate until ready to use.
